Baye-Baye

When you are fun of delicacies, this one is for you. I first saw and tasted this when I went to Iloilo city, Panay. This was sold along the highway from Cabatuan airport going to Sta. Barbara. I asked my friend JessRaf Palmares what Baye-Baye is. According to him, it is a delicacy made of grinded rice turned into gluten, with the right mixture of sugar and coated with flour to control its stickiness. This is similar to the espasol in Laguna and Rizal it is just the shape was square.

Baye-Baye is available not only in Panay but also in Negros provinces. For this one, I was able to taste a version from Bayawan City, Negros Ocidental. It was brought the aunt Dolly of my wife from Sta. Catalina when they went to Bohol to attend a special occasion. It is IVON’s Special Baye-Baye. You may eat it directly and you may also fry it to have a different texture. Any preparation method or ritual you perform before eating this sweet thing, is okay as long as you enjoy it. I would recommend a cup of coffee with baye-baye. To make it a memorable experience, I suggest you have it with your friends. J

Budbud sa Tanjay

Budbud at Tanjay

 

 

Whenever we go to Negros Oriental particularly at Tanjay City, this is one delicacy that we will never miss. It is Budbud. This is similar to the sumang malagkit in Tagalog region but the difference is the taste. This one is sweet and has a twist of chocolate. All most all delicacies in this region are sweet. This will not be that if the sugar plantation is very accessible and vast lands are occupied with sugarcane. Believe me or not, even the cliff is planted with sugarcane. I saw this one during our travel from Dumaguete going to Bacolod.

Budbud may be found in Tanjay City, Negros Occidental. This delicacy started after the war of 1945. Before, they use to make only budbud with sticky rice and sugar. During the 70′s they introduced budbud with chocolate. If you want to have it, just visit Tanjay public Market and it is already available. There is this saying about the budbud in Tanjay “Ang budbud sa Tanjay, ilambos sa haligi, molikos lagi “. It means the budbud in Tanjay, if you slam it to a post, it will stick and wrap around. This is how sticky this bubud is. A truly original Tanjay made and a true Filipino signature taste.
